Indian Spiced Chickpeas, Potatoes and Spinach. A very simple curry, made with chickpeas and spinach. Best made freshly ground coriander and cumin seeds. Adjust the amount of chilli to suit how hot you like your curry.
Lentil “Meat” Balls, I served them with brown rice pasta with a simple marinara sauce. But we had so many left over, that the next time we ate them, we changed it up completely and served them with mashed potatoes and gravy.
These vegan kofte kebabs are made with a mixture of spiced chickpeas, rolled up and cooked on skewers with summer veggies. Serve with pita bread and hummus or vegan tzatziki sauce for a hearty Mediterranean-inspired meal. Really nice recipes.
