Mexican cinnamon! Also know as canela this cinnamon has a rich mellow flavour. Really good in mole sauce and lots of other Mexican dishes. It's also great for general baking. Mulato chillies are grown predominantly in Jalisco and Puebla regions of Mexico and very closely resemble Ancho Poblanos - however they are darker and have a more intense fruity flavour. They are used with Ancho Poblano and Pasilla in the Mexican national dish, Mole. Use as a main ingredient in Mole sauce. Can be used in conjunction with or as an alternative to Ancho Poblano chillies. Add to your cooking for gentle heat and a great flavour kick.
