Chop up some veggies whisk some eggs and throw them in a muffin tin. I do many different variations but these ones are hands down my favourite. And my family loves them too so thats a plus! Chop up some veggies, whisk some eggs and throw them in a muffin tin. I do many different variations but these ones are hands down my favourite. And my family loves them too so that's a plus! Adding in salsa really makes a difference and enhances flavour! Try it! Make sure to grease the pan well so the eggs don't stick, or feel free to use silicon Pan/ paper muffin cups! # Sweet Potato, Broccoli, and Bacon Egg Muffins @Bucknakedpaleo # Ingredients: 2 Tbsp avocado oil/or ghee 9 eggs 2 Tbsp compliant coconut milk 2-3 Tbsp compliant Salsa of choice (I like Neal's Brothers Salsa) 6 slices compliant bacon, cooked till crispy 1 small sweet potato, peeled and shredded (approx.1 ½ cups shredded) 1 small bunch broccoli florets, chopped small (approx. 1 cup) pinch salt and black pepper # Method PREHEAT oven to 400 degrees and prepare a 12 cup non-stick muffin tin by lightly greasing each well using 1 Tbsp of the coconut or avocado oil. IN a bowl, whisk together eggs, coconut milk, salsa, and a pinch of salt and pepper. Set aside. ADD remaining tbsp of oil to a medium size skillet over medium heat, cook the shredded sweet potato and broccoli until soft (about 5 minutes). season with salt and pepper. IN the muffin pan, layer the softened shredded sweet potato and broccoli, cooked bacon, and top with the egg mixture. Repeat to make 12 egg muffins. I like to give each a little mix to make sure everything is distributed nicely. BAKE in the preheated oven for 10-15 minutes or until set, and the tops should be slightly browned. SERVE right away or store covered in the refrigerator for easy on-the-go breakfasts/snacks! # #Whole30 #Whole30recipes

Feeling so tired of eggs and veggies this morning. I obviously don't want to get burnt out on those so I need to change things up a little bit! #whole30
