TAMARIND CHICKEN ADOBO WITH COCONUT MILK. I didn't have any fresh chili, so sub'd 2 crushed dry thai chilis that I had on hand. I used 2tbs soy and 3 tbs fish sauce to marinate chicken and a whole head of garlic, whole can of coco milk, and 1/2c tamarind puree. This recipe is very different than any other adobo I have ever had in that there is no vinegar and barely any soy sauce, it seems more Malay or Thai in scent. At any rate it is delicious.
