Slow cooker quinoa and vegetables     UPDATE: made with mushrooms, bellpeppers, onions, carrots and sausage.  Probably left it there too long (little over 4 1/2 hrs) as carrots were mushy and sausage was well done.  Otherwise, good flavor and easy to cook in slow-cooker.
