Dairy Free Cottage Cheese: 1 block of medium-firm or firm tofu, (fresh & not silken or frozen), 0.5 tsp minced garlic, 4 tbsp olive oil, 1 tsp salt, 6 tbsp LF milk, 2 tbsp cream cheese imitation. *Mash Tofu. Add remaining ingredients and continue mashing until it has the consistency of cottage cheese. Cover and refrigerate to set further if desired. ***Makes about 4 1/2 c servings.
