Chocolate avocado pudding {Vegan}  Makes 4 ramekins. 1 medium avocado, 1/2 cup coconut milk, 1/4 cup creamy unsweetened peanut butter, 2 T maple syrup and 3 T agave syrup  (use one or the other, or something else; sweeten to taste. 3 tablespoons unsweetened cocoa powder; 2 teaspoons vanilla extract; 2 pinches sea salt; 2 tablespoons unsweetened coconut flakes (optional; for garnish). Food process until smooth and creamy.  Transfer to dishes.  Serve immediately or cool.
