Canned Rhubarb Pie Filling ~ 3 1/2 C Rhubarb diced; 3/4 C + 2 Tbsp sugar; 1/4 C+ 1 Tbsp Clear Jel; 1 C water; 3 Tbsp lemon juice.  Blanch rhubarb 1 minute. Drain. Keep warm in covered pot. Combine sugar, Clear Jel, & water. Stir on med heat until it thickens & begins to bubble. Add lemon juice. Boil 1 min stirring constantly. Fold in drained rhubarb. Quickly fill hot quart jars.  Leave 1 1/2" headspace. Remove air bubbles. Clean, cap & process in water bath 30 min at a full rolling boil
