Chia seed pudding :: 1 cup coconut milk for every cup Chia seeds. Mix together. If you prefer you can add in sweetener like agave or honey, puréed fruit, vanilla, cocoa powder, etc. Set for hours in the fridge and enjoy!
Vanilla Chia Breakfast Pudding (Bad iPhone pic!) 3/4 C unsweetened almond milk 2.5-3.5 T chia seeds (play to get desired thickness) 3 T canned coconut milk (my favorite is Chaokoh) 1/3 scoop vanilla whey protein powder 1/4 tsp vanilla extract Scant 1/4 tsp sea salt 1/4 C plain Greek yogurt (I used Fage) Stevia (or other sweetener) to taste Whisk together. Let stand 15 min then stir. Cover/refrigerate overnight and eat in the morning! Serves one 301cal, 14.7g carb, 9.1g fiber, 19 g protein
