How To Roast Beets: Two Approaches.  Tried this pin, tried the top approach "roast the whole beet" but did some with and other without foil (simply washed and trimmed).  Both ways worked great! In the foil the skin peeled off easily by hand and they looked very smooth.  Without foil it was a little harder and they didn't look as nice but taste similar, could work if you want to save foil.
