Baked Seitan. I've made many batches of seitan where you make a rich broth and simmer but DON'T BOIL the seitan. Except I always accidentally boil it and it comes out like soggy sponge brains. This way is SO GOOD! Use it in a stir-fry, thinly sliced for gyro-like wraps, in "beef" & broccoli, or cut into slices. Yum!  Mess around with the spices. My fav is pretty close to the recipe, but no ketchup or sage. If you leave out the ketchup make up for the liquid with broth -DPD
