When we bought the cottage, I was delighted to discover a threesome of blackcurrant bushes out in the back garden. I missed the first few years' worth of harvest but this year managed to get enough to make this deliciously moist Blackcurrant Almond Cake.

This easy layered traybake is inspired by American coffee cakes – which contain no actual coffee, but are meant to be eaten with your morning cuppa. If you were really pushed for time, you could use a very good quality soft jam for the filling, but it will be much sweeter.
I don't think I could write a book that didn't include a recipe for trifle somewhere - and this, I tell you, is the trifle to end all trifles. The shiny black of the berries, the soft whiteness of the mascarpone above them and the golden toastiness of the almonds on top, make it, in the first instance, beautiful to look at.
