The best Christmas cake recipe I have tried. It was a great success last year and I look forward to trying it again this year. I used brandy and let it mature for about 8 weeks feeding it more brandy every now and again.
These truffles make great gifts – just wrap them in little sweet tins or boxes tied with ribbon. The surprise comes from adding a tiny pinch of chilli to the last bit of mix. You'll end up with a few spicy truffles hidden away amongst the rest! A spicy lucky dip.
TRADITIONAL STEAMED CHRISTMAS PUDDING: 1 1/2 cp flour, 1 cp sugar, 1 t. cinnamon, 1 1/2 t. baking powder, 1/4 t. salt, 2 eggs beaten, 1/4 cp melted butter, 1/2 cp all-fruit mincemeat, 1/2 cp whole berry cranberry sauce, 1/2 cp pumpkin puree. Spray pan/mold with Pam, pour in mixture. Steam 2 1/2 hrs. over large pot with few in. water, on med. Cook custard, whisking til thick.
