Egg and Veggie Bites: 1. Mix 3 eggs, 1 egg white, 1/4 cup milk, and 1/4 chicken/veggie stock. (I actually just used Cream of Chicken soup.) 2. Chop up a few veggies of your choice. I used carrots and celery. Stick them in a pan on the stove or in the oven to soften just a little. 3. Mix the veggies in with the eggs. 4. Spray a muffin tin. Pour the mixture in (makes 6 big ones). 5. Bake at 350F for 20-25 minutes, until the egg sets.
