Vegan banana mini muffins for my mini muffin. #mangiabene #homemade #talesfromnw  I followed a very loose recipe of incorporating  1 cup oats 1 cup white flour 1 heaped tbsp dairy-free vegan cacao (or normal cacao) 1 tsp baking powder 1 tsp baking soda  2 tsp of sugar or jaggery (can omit if you like) A pinch of salt  1 cup of mashed banana 1/4 cup of melted coconut oil  1 tbsp of flaxseed soaked for 10 mins in water and 1 tbsp of apple cider vinegar (you could probably replace both of these… Mini Banana Muffins, Flaxseed, 1 Egg, Apple Cider Vinegar, Baking Soda, Coconut Oil, Dairy Free, Oven, Sugar
