Rice Krispies make a tasty coating for fish, and I like to make these finger-sized goujons, as they cook quickly and can be easily cooked from frozen. Another good coating to try is crushed cornflakes. Simply cut the fish into strips, coat in seasoned flour, lightly beaten egg and then crushed cornflakes and saut
A quesadilla (pronounced ke-sah-dee-uh) is a Tex-Mex dish that involves cooking ingredients inside tortillas. I find children like eating tortillas - one of the reasons is that they can eat them with their fingers. You can add other ingredients to this, such as some shredded cooked chicken. To serve, you can use a bought salsa or guacamole.
My daughter Lara really likes fritters. She often has them as a snack so I keep a supply of them in the freezer. To freeze them, wrap the cooled fritters in foil in a single layer with 2 fritters per packet. To serve preheat the oven to 180C/350F/160 fan and put the frozen fritters on a baking sheet. Bake for approximately 8 minutes, until hot. These sweetcorn fritters can also be made with gluten free flour.
