Ingredients:

Pulled Mushrooms:
 • 600 g king oyster mushrooms
 • 1 small onion
 • 2 garlic cloves
 • 200g Waitrose’s 3 Chilli Paste
 • 2 tsp dried oregano
 • 2 tbsp soy sauce
 • 1 orange (juice only)

Coriander Salsa:
 • 1 jalapeño
 • 1 garlic clove
 • 2 spring onions
 • 100g coriander
 • 2 limes
 • 50 ml olive oil
 • 1 tsp sugar

Garnish:
 • 1 red onion
 • 150 ml red wine vinegar
 • 1 avocado
 • 10g coriander
 • 2 limes
