Zucchini and Ground Beef Casserole Try making this DASH friendly - - cut salsa amount by 1/2 and use 1 cup onion plus 1/2 cup chopped red bell pepper (will cook down) and 1/2 Tbsp chili powder to reduce sodium and up potassium! Serve over brown rice and top with 2 Tbsp plain Greek yogurt and chopped cilantro.
